Energy Ball Treats

These are amazingly easy to make, packed with good stuff, and great to eat as a treat or when you feel the need for something sweet.I try to make a batch of them every weekend to last me the week, and just store them in the fridge. There are many variations of this recipe, and I recommend that you experiment to find your favourite mix, but this is a good one to kick off with, and to use as a base. 


Ingredients
One cup of nuts (can be whatever you have in cupboard)
One cup of seeds (pumpkin or sunflower)
One cup of dried fruit (either dates, prunes, cranberries, apricots)
50 grams of cacao butter
50 grams coconut sugar
40 grams cacao powder
Dessicated coconut

Method
If you have a nut grinder such as a Nutri-Bullet, use to grind the nuts and seeds. If not, you'll need a powerful blender. Blend the nuts, seeds and fruit in the blender. 
Place a pirex bowl into a pan of water and heat. Place the cacao butter and powder and the suger in the bowl and melt. Once melted, add the paste to the blender and blend with the nut/seed/fruit mix. Next, form the mixture into small round balls (about the size of a ping pong ball. You can then roll the balls in the dessicated coconut if you wish. Place the balls on a non stick baking tray and pop in the fridge over night. 

Et voilà! The balls will last for about a week to 10 days if kept in the fridge.  Enjoy!
