Nice 'n' healthy pancakes

Well it wouldn't be right not to share a healthy pancake recipe on Shrove Tuesday!  This one is as close as I've been able to find to the real McCoy. But because it's using oats instead of wheat flour, more people tend to be able to tolerate it, and it's much lower on the GL scale (i.e. its affect on blood sugar). 
INGREDIENTS

1 Cup of organic oats (or shop bought oat flour)
3/4 cup of oat milk (you could use coconut or almond if you prefer)
2 large organic eggs

METHOD

If you don't have any shop bought oat flour you can just make your own using a grinder such as a Nutribullet or equivalent. Then just add the eggs and milk, and blend thoroughly to make a traditional batter. If it's a little thin you can add more oats, too thick then add a little more milk. 

Et voila! Delicious and a (fairly) healthy pancakes! 

I top mine with bananas and Canadian Maple Syrup, or some Xylitol (in place of sugar) and lemon juice.
