No Bake Oaty Energy Balls

​Energy balls are a staple in my fridge, they’re brilliant for a post workout protein hit, but also great if you fancy something sweet but want to be good!

I usually make mine with cacao powder but I fancied a change from the chocolatey flavour so decided to experiment. Usually when I experiment it might take me at least two goes to get consistency right, but with these they were spot on first time!

I decided to add in some oats for slow release energy, which I haven’t done before, and it added a lovely texture to them, combined with the dates (which I always use) which give them chewiness. And using nut butter, rather than nuts, made them really extra creamy.
I also added in some ground flax seeds for healthy Omega 3 fats, coconut oil for more healthy fats in the form of MCFA (medium chain fatty acids), and some cinnamon for added flavour and sweetness.

Total Time - 10 Mins


Ingredients

1 Cup Rolled Oats
1/2 Cup Cashew Nut Butter
8 Medjool Dates
1/4 Ground Flax Seeds
1 Tbs Canadian Maple Syrup
1/2 tsp Cinnamon Powder
2 Tbs Organic Cold-Pressed Coconut Oil

Instructions
  1. Place the dates, maple syrup and cashew butter into a food blender and blend well until thoroughly combined, into a paste (and dates are chopped small). 
  2. In a large mixing bowl place all the other ingredients except the coconut oil, and combine.
  3. Add the date/nut butter mix to the bowl and with your hands mix thoroughly until all ingredients are combined. 
  4. Add the coconut oil and mix again until coconut oil is melted and evenly distributed. 
  5. Roll the mixture into small balls. Aim for about 12 balls in total.
  6. Place on a tray and pop into the fridge to chill for 30 minutes.
