Simple Chia Seed Breakfast Pudding

Delicious and extremely healthy, chia seed pudding is such a quick and healthy breakfast option. It's packed with protein, omega 3 fatty acids, anti-oxidants, fibre, vitamin E and B complex,  and actually more and lots of minerals including calcium and magnesium. In fact, there's more calcium in chia seeds than milk! And because of the magnesium content, it is more easily absorbed too....
The following is a basic recipe but the great thing about chia seed pudding is that you can add so many different things to it to change the taste, use different milks such as almond or oat milk if you prefer, and mix up the fruits too. If giving to children, they sometimes aren't keen on the seed texture. If that's the case, just grind the seeds first in a blender or Nutri-Bullet and this will give a smooth texture to the dish. 

INGREDIENTS

(Serves 4)

2 Cup of Coconut Milk (or milk of your choice)
1/2 Cup Chia Seeds
1 teaspoon vanilla extract
​1/2 teaspoon cinammon

METHOD

  1. Put coconut milk, vanilla and cinammon into a jug and whisk. Add the chia seeds (either ground or whole) and continue to whisk for 1 to 2 minutes. The whisking is important to ensure that the chia seeds don't clump together. 
  2. Then simply pour the mixture into small glasses or glass jars, pop in the fridge over night and in the morning you will have a nutrient-full breakfast ready to eat. 
Optional extras include:
  • Blueberries or a berry of your choice
  • Canadian maple syrup (if you want it a little sweeter or for a dessert)
  • A tea spoon of cacao powder to give it a chocolaty twist 
  • Sliced bananas
  • Some protein powder to give it a protein boost, great if you plan to train afterwards
  • Large teaspoon of Almond Butter, or a nut butter of your choice. (Make sure to put the mixture through the blender if using a nut butter, to get a smooth consistency, either before or after adding the chia seeds.)
