Wheat Free, Gluten Free Apple and Banana Cake

I love this recipe. It’s unbelievably easy to make, delicious, and has no wheat flour or gluten in it, plus no sugar (the sugar is replaced with Xylitol which has a very low glycaemic load, meaning it doesn’t adversely affect blood sugar). It’s an adaptation of a recipe I saw recently which was completely grain free, made just with almonds (which as we know, are great for us).

Ingredients
  • 200 grams ground almonds (I use a NutriBullet to grind them to a powder but a processor will also do the trick)
  • 50 grams gluten free oat flour (again, I make mine myself but you can buy this in the health shop if you prefer)
  • 2 cooking apples
  • 1 banana (slightly over ripe is better if you have it)
  • ½ tspn baking powder
  • 3 medium sized free range eggs
  • 150 grams Xylitol
  • 2 tspn cinnamon

Method
  1. Pre-heat oven to 180C / 350F / Gas mark 4. Take a baking tin and line with baking parchment.
  2. Prepare your almond and oat flours (or measure out, if shop bought).
  3. Peel  the apples and dice into small squares. Cut the banana into slices. Place the apples, banana, almond and oat flour, baking powder and cinnamon into a large mixing bowl and mix together well.
  4. In a separate bowl, beat/whisk the eggs and Xylitol until they are light and fluffy. The mixture won’t go quite as fluffy/stiff as it would with real sugar but you need to give it a good whisking for a 3 to 5 minutes, to trap as much air in it as possible.
  5. Next fold the apple/banana mixture into the egg mixture, trying not to displace too much of the air and carefully mix. Immediately transfer the mixture to the baking tin.
  6. Bake in the oven for 45 to 50 minutes, or until it is firm to the touch and slightly browned.
  7. Remove from the oven and transfer to a cooling rack. When it’s cool, cut it up into squares or rectangles and enjoy!
